The words "Ahuacatl" or "Xocolatl" may not be part of your daily vocabulary, but it is very likely that the products they ancestrally refer to are part of your daily life.

Aguacate – the Spanish term for avocado – was derived from Ahuacatl and is the main ingredient of guacamole which, according to studies, inhabitants of the United States consume at a rate of 3 kilograms per year. In Europe its popularity has also increased, to the extent that between 2010 and 2016 the amount consumed per inhabitant doubled to reach 0.75 kilograms per year.

On the other hand, Xocolatl (in this case the X is pronounced as sh) is the Nahuatl word for chocolate, which has long been one of the favorite treats around the world.

Although it is well known that Belgian chocolates are among the best in the world, both cocoa – from which chocolate is extracted - and avocado originate from Mexican lands.

While avocado is fully identified with Mexican food - independent of its inclusion in all kinds of salads and dishes -, chocolate has been repositioned in Mexico throughout recent years with the introduction of novel processes. These processes take advantage of its qualities and result very attractive sensory creations that deconstruct and recreate the flavors found in delicious desserts and chocolates.

A magnificent example of this is found in the work of Master Chocolatier José Ramón Castillo, the founder of Que Bo! Chocolatería Mexicana Evolutiva and recognized by Le Guide de Croqueurs de Chocolat as one of the best in the world. He is not afraid to combine pre-Hispanic flavors like chapulín - a species of small crickets – or the maguey worm with chile, pan de muerto, or sweets from your childhood like banana bubblegum with cocoa butter to create a unique flavor experience.

In upcoming weeks, José Ramón Castillo will be in Puerto Vallarta as part of a festival that will celebrate this vision of chocolate with tastings and practical demonstrations of its preparation. A few days before, avocado will be the main guest of another event that will explore new ways to enjoy the benefits and the incomparable flavor of this natural delicacy.
